Post Labor Day Fun!

I hope you all enjoyed your long weekend even though I'm sure for most of you it wasn't long enough! Did you go on picnics with your friends and families, travel, or go on a short staycation?

This year for the Labor Day holiday we picnicked however we didn't have a traditional picnic with hotdogs, hamburgers and baked beans. We decided to do something a little different for summer's last hoorah. We made Mountain Pies! I'm sure some of you are wondering "What in the world is a Mountain Pie?" but if you've ever camped out or been to summer camp or are just sort of a country girl like me you probably know that they can be made of just about anything! What's cool about making a Mountian Pie is that it is sooo simple and the cook time is a couple of minutes at most. We used special Mountain Pie makers like the one pictured below.


You can do dessert pies, sandwich pies or whatever! We made mountain pie pizza using bread, butter, pizza sauce, shredded mozzarella, and pepperoni. I've posted the recipe for you. Don't worry if you don't have a mountain pie maker you can still make the pizzas on your griddle. It's quick and easy and kids love it...my little brother ate 5 last night. So get your campfire lit and give this recipe a try!

Mountain Pie PizzaIngredients:
** 3/4 tablespoon of butter
** 2 slices of square white bread (rectangular bread such as Italian won't fit in the mountain pie maker but you can use it if you are making this on a griddle)
** About 2 tablespoons pizza sauce (more or less to taste)
** 2 tablespoons shredded mozzarella cheese (more or less to taste)
** 3 slices of pizza pepperoni

Directions:
- Butter two slices of bread on one side only.
- Place slice of bread BUTTER SIDE DOWN and put pizza sauce on the other side.
- Then add the shredded cheese and pepperoni slices.
- Cover with the other slice of bread, BUTTER SIDE UP!
- Place sandwich in the mountain pie maker, close and place it on the hot coals of the fire for about 1 minute on each side. Time may vary depending on how dark or light you like your sandwiches. If you're using a griddle, set it to 350 degrees. Cook 5 minutes on each side. Once again, adjust time depending on how dark or light you like your sandwich.

Makes one sandwich.

CAUTION: The Mountain Pie Makers and finished pies are EXTREMELY HOT! Handle with care and PLEASE don't let your children do this without adult supervision since there is fire involved!

  2. I'm glad you had a fun time! :D Mountain pies sound like they make really fun meals!

    Because we just started the school year and because we get a study day later in the semester, I didn't get labor day off. So yesterday consisted of classes, working out at the gym, and a dorm meeting, for the most part. Plus taking that picture for Casey's contest! ;)

  5. Wow! Okay, so I'm really glad I popped in...this sounds so good! LOL! You started talking about a "Mountain Pie maker" and I was like what the heck!? Even though I definitely don't have one of those...this sounds very tasty so thanks for mentioning it!

    HAPPY EARLY BIRTHDAY!!!! I will definitely be back before then and around then and probably on the day to wish you a happy birthday too, but ummmm I like wishing people happy birthday *grin*
